MY FATHER AND I WE BOUGTH THE FARM 25 YEARS AGO FROM MY GRANDMOTHER BROTHER, ALBERTO RUBIO, WHO HAD BEEN FARMING AND USED TO HAVE A CATTLE FARM FOR MANY YEARS UNTIL WE ADQUIRED. THE FARM BECAME THE HIGHEST ELEVATION COFFEE FARM IN PANAMA AND CENTRAL AMERICA, AND IT WAS A MYTH TO GROW COFFEE AT SUCH ELEVATIONS 20 YEARS AGO, AND IT BECAME A GREAT CHALLENGE BUT WE DECIDED TO PLANT THE LOWER PART OF THE FARM WITH CATUAI AND CATURRA VARIETALS IN THE YEAR 1998 AND 5 YEARS LATER I DECIDED TO PLANT GEISHA SEEDLINGS FROM LA ESMERALDA AND ALSO GEISHA SEEDS FROM TITO VARGAS THAT WILFORD LAMASTUS AND ME MADE A SEEDLING FOR OUR FARMS. TODAY WE ARE THREE GENERATIONS WORKING TOGETHER MY FATHER AND MY SON GABRIEL WHO IS WORKING IN FARM OPERATIONS AND QUALITY CONTROL LAB. ( CUPPING TOGETHER WITH ME ALL THE LOTS PRODUCE EVERY YEAR ).

LOS LAJONES ESTATE WAS THE FIRST ORGANIC CERTIFIED COFFEE FARM IN PANAMA IN THE YEAR 2004 BY BIOLATINA AND WE KEEP THE CERTIFICATION FOR SEVEN YEARS UNTIL WE DECIDED TO KEEP THE ECOLOGICAL FARM PRACTICES AS CORE BASE OF OUR MANAGING OF THE PLANTATION NOT USING PESTICIDES. LOS LAJONES WAS THE FIRST FARM IN PANAMA PRODUCING ONLY HONEY AND NATURAL PROCESSED COFFEES SINCE 2004 AND WE EXPORT OUR FIRST NATURALS TO SCANDINAVIA AND EUROPE IN 2005. SINCE THEM ON WE USED CERO WATER IN OUR PROCESSING TECHNIQUES AND ESTABLISHED A HIGH QUALITY CLEAN NATURAL PROCESSED CATUAIS AND GEISHAS TRADITION IN OUR FARM AND A VERY EXCLUSIVE PORTAFOLIO OF SPECIALTY COFFEE ROASTERS AND TRADERS ALL AROUND THE WORLD. WE HAD BEEN USING ANAEROBIC CONTROLLED FERMENTATION IN OUR EXPERIMENTAL LOTS FOR THE LAST 8 YEARS WITH GOOD RESULTS AND DIFFERENCIATED CUP PROFILES ENHANCING SPECIFIC ATRIBUTES
